200ml newly squeezed lemon juice
500g fine sugar

Directions

Making the Cordial: Put every ingredients in a pot, bring to a light boil, mixing so the sugar melts. After that, remove from the stove and let it to cool entirely. Decant to a sterilised bottle, close it and store chilled, it can be stored for about four weeks.

For the Premix: Mix all the liquids in a sizeable container, leave to sit for an hour, then strain preferably using cheesecloth, making it perfectly clear.

When ready to serve: Measure 85ml of your cocktail base into a mixing glass packed with ice, gently stirring gently for about 60 seconds to cool it down. Filter into a chilled martini glass or equivalent, garnish with the cranberries adding the final touch by giving it a quick spritz of the essential oil above the glass.
